Aunt Ruby’s Spicy Cole Slaw

Description
This is a great slaw for a hot day, without creamy dressing. I put this on pulled pork sammies, tacos or I add this to chicken to for dinner.
Ingredients
- ½ heads Red Cabbage, Shredded
- ½ heads Regular Cabbage, Shredded
- 1 package (about 1 Oz. Packet) Dry Italian Dressing Mix
- 1 whole Jalapeno Or Serrano Pepper, Seeded And Chopped
- 2 cups Monterey Jack Cheese, Shredded
- 3 whole Tomatoes, Chopped
- ½ cups Oil And Vinegar, To Taste (Possibly More To Coat)
- ½ teaspoons Salt And Pepper, to taste
Preparation
Mix everything in a big bowl. Chill and serve.
Note: you can use canned jalapenos (chopped), but do use some juice also.
