A healthy and fresh take on traditional potato salad.
1. Par-boil potatoes until fork tender, approximately 10-12 minutes. Drain, rinse with cold water and set aside
2. In a large frying pan, saute shallot with bacon on medium heat for 4-5 minutes.
3. Add asparagus pieces and saute for another 2-3 minutes.
4. Whisk together mustard, vinegar and oil.
5. In a large mixing bowl, combine potatoes, asparagus, bacon, dressing mixture and chives. Toss well to combine.
6. Season with salt and pepper to taste.
7. Serve warm or cold.
