A light side dish (or meal) that is easy to whip up in a hurry!
Clean asparagus thoroughly. Cut off ends (from the bottom to about 1 inch in). Cut the remaining asparagus into bite-sized pieces (1-2 inches).
Fill a large pot halfway full with water (approximately 8 cups). Bring to a boil. When at a boil, add a dash of salt and the pasta. Cook pasta (per directions on the box) until only 3 minutes remain in the cooking time. Add the chopped asparagus into the water with the pasta to cook for the remaining 3 minutes.
Strain the pasta and asparagus and immediately rinse with cold water. This will stop the cooking process and also cool your asparagus and pasta for serving purposes. Rinse until the pasta and asparagus are cool to the touch.
Place asparagus and pasta into a bowl. Grate your Parmesan cheese and add into the bowl along with the olive oil and pepper and salt. Mix thoroughly and enjoy!
