A perfect use-up for any herbs and greens.
Layer the greens, herbs, and scallion in a large serving bowl. Sprinkle lightly with coarse salt and pepper.
Pass the bowl around at the table with lemon wedges and olive oil so that everyone can dress their own salad.
You could also use a light vinaigrette, but I find that lemon and oil works perfectly with the herbs and greens.
Perfect for the next time you need a 2-minute side dish!
