Arugula and Prosciutto Almond Salad

Description
Packed with fresh arugula, salty prosciutto, roasted almonds and tossed in a light olive oil dressing, this Arugula and Prosciutto Almond Salad is light, refreshing and full of nutrients!
Ingredients
- 3 cups Baby Arugula/spinach Mix
- 6 ounces, weight Sliced Proscuitto
- ¼ cups Blue Diamond Roasted Salted Almonds
- 3 Tablespoons Shaved Parmesan Cheese
- FOR THE DRESSING:
- ¼ cups Olive Oil
- 2 teaspoons Fresh Lemon Juice
- ¼ teaspoons Garlic Powder
- Dash Of Pepper
Preparation
In a large bowl, combine arugula, prosciutto, almonds, and cheese. Set aside.
To make the dressing, in a medium bowl, whisk together olive oil, lemon juice, garlic powder, and pepper. Pour over salad just before serving.
