Apple Pistachio Salad with Sherry Shallot Vinaigrette

Description
Tart apples, flavorful gorgonzola cheese and a sherry shallot vinaigrette put this salad over the top!
Ingredients
- FOR THE DRESSING:
- ⅓ cups Extra Virgin Olive Oil
- ¼ cups Sherry Vinegar
- 1 Tablespoon Minced Shallot
- ½ teaspoons Dijon Mustard
- ¼ teaspoons Minced Garlic
- ¼ teaspoons Honey
- FOR THE SALAD:
- 5 ounces, weight Spring Mix Lettuce Blend
- 1 whole Granny Smith Apple, Thinly Sliced
- ¼ cups Shelled Pistachios
- ⅓ cups Gorgonzola Cheese Crumbles
Preparation
Combine dressing ingredients. Set aside.
Top spring mix with apple slices, pistachios, and gorgonzola cheese. Drizzle dressing over salad.
