This salad not only gives a beautiful presentation but is deliciously tasty too! When vegetables are in the summer season this cool side dish is a great accompaniment to any main dish.
1. Peel and slice cucumbers. Put them in a bowl and cover them with water. Add 2 tablespoons salt and allow to sit at room temperature for 3 to 4 hours.
2. Drain the water off of the cucumbers and add tomatoes and onions.
3. Mix 8 ounces of Italian dressing with balsamic vinegar and sugar. Pour this over the vegetables. Add additional dressing to taste.
4. Refrigerate until cool, at least 2 hours. Store in airtight container up to 4 days in the refrigerator.
Note: Salting the cucumbers can be omitted, but it does take the bitterness from the cucumbers and makes them more easier to digest.
