A basic veggie salad with 11 colorful layers that are very eye-appealing.
You will need a LARGE bowl for this salad. It makes a lot!
Wash lettuce and place in a salad spinner to remove excess moisture. Tear into pieces and place in the bottom of your bowl.
Wash purple cabbage. Cut or tear into pieces and place on top of lettuce.
*I prefer to toss lettuce and cabbage together after this step so they are mixed instead of layered on top of one another.
Wash and cut cucumber into slices and then cut each slice in half. Place on top of lettuce/cabbage layer until covered.
Wash and cut squash into slices and then cut each slice in half. Place on top of cucumber layer until covered.
Peel your onion and cut into small diced pieces. Sprinkle generously over the squash layer.
Wash and cut red bell pepper, removing seeds and stems. Cut into small diced pieces and sprinkle generously over onions.
Sprinkle shredded carrots generously over the bell pepper.
Wash and cut each cherry tomato in half. Place halved tomatoes generously over your carrots.
Wash and cut green onion into small diced pieces and sprinkle generously over tomatoes.
Wash and cut your jalapenos, making sure to remove ALL seeds. Cut jalapeno into LARGE pieces. Make the pieces large, so that people who do not want jalapenos can easily remove them from the salad. (However, you will be amazed at how delicious the jalapeno is in the salad.)
Sprinkle salad with chopped parsley before serving.
Beside the bowl of salad, I place:
a bag of seasoned croutons
bacon bit pieces
shredded cheese
various salad dressings
