Description

A quick and tasty dinner for two when you’re scrambling to figure out something to cook at the last minute!

Ingredients

  • ½ pounds Whole Wheat Angel Hair Pasta
  • ¾ cups Heavy Whipping Cream
  • ½ sticks Butter
  • 1 cup Parmesan Cheese
  • ½ cups Frozen Spinach
  • 1 pinch Nutmeg
  • ½ teaspoons Salt
  • 1 teaspoon Pepper

Preparation

I fixed this one night when I had no idea what to prepare for dinner, and we often have too many leftovers since it’s just my husband and me eating every night. I happened to have all of these ingredients right at home, so it made for a quick and delicious meal!

First, boil salted water in a large pot. Add pasta, and cook for 6–8 minutes (al dente). While the noodles are cooking, pour whipping cream into a sauce pan with the butter and parmesan cheese, and keep mixing until smooth. Add spinach, nutmeg, salt and pepper.

Drain noodles and place them in a large bowl. Pour the sauce over noodles and mix well.

This is a pretty simple pasta, but if you’re wanting a little extra flavor or more veggies, some sauteed zucchini is an excellent companion to this dish! Enjoy!
