Description

Watermelon adds a sweetness to this spicy, no cook, seafood dish. Perfect for hot summer nights when ovens seem like daunting beasts.

Ingredients

  • 3 cups Watermelon, Chopped
  • ½ cups Diced Red Bell Peppers
  • ½ cups Diced Red Onion
  • ¼ cups Chopped Cilantro
  • 1-½ Tablespoon Diced Fresh Jalapenos, Seeds Removed
  • 1-½ cup Chopped Shrimp, Tails Removed
  • ½ cups Lemon Juice
  • 2 teaspoons Kosher Salt
  • 1 teaspoon Black Pepper
  • 1 Tablespoon Chopped Basil
  • ½ teaspoons Sriracha
  • 2 pounds Corn Chips
  • 1 head Boston Lettuce

Preparation

Put all the ingredients (except the chips and lettuce) in a large bowl and mix until combined. Allow to chill for at least an hour before serving. Serve on a bed of lettuce beside chips for dipping.
