Growing up, there were certain dishes that appeared at each gathering. Sausage and peppers was one of them. It was almost always at summer cookouts, graduation parties, or random Thursdays. It’s certainly one of the dishes I miss. So I decided to make a healthier version: Turkey Sausage & Peppers.
Remove sausage casing by putting the back side of the knife in the center of the link and pushing down. The meat will start to come out of each end. Squeeze the meat out and cut into smaller pieces. Add to a large saute pan.
Add peppers and onions on top and cook over medium heat, covered. After 15 minutes, uncover and stir. Cook uncovered for another 8–12 minutes or until sausage is fully cooked and peppers are soft.
Serve wrapped up in flatbread. Enjoy!
