Description

After a long testing period, I’ve finally made a tasty Protein Strawberry Cheesecake! It’s moist, delicious and each slice is only 187 calories!

Ingredients

  • 11 ounces, weight Cream Cheese- Low Fat
  • 5-½ cups Greek Yogurt, Plain, Fat Free
  • 1 teaspoon Vanilla Extract
  • 1 Tablespoon Honey
  • 2  Large Eggs
  • 2  Scoops Vanilla Protein Powder
  • 14  Strawberries, Divided

Preparation

Preheat oven to 325ºF. Spray a 9-inch springform pan with nonstick cooking spray. Be sure all ingredients are at room temperature before you begin.

Using a mixer (handheld or countertop), beat cream cheese, Greek yogurt, vanilla extract and honey until light and fluffy. Add each egg in one by one until mixed well. Mix in protein powder. Be sure to scrape the sides of the mixing bowl to make sure everything is blended well.

Fold in 5 sliced strawberries. Pour batter into the pan and place into the oven. Cook at 325ºF for 40 minutes, then lower oven temperature to 200ºF and cook for another 90 minutes.

Once cheesecake is golden brown around the edge and a toothpick comes out clean, remove and let rest for 15 minutes. Hull remaining strawberries and place around the cake, making sure each of the 8 slices has a berry. Add the remaining hulled berry to the center.
