Description

A hearty crowd-pleasing casserole filled with spicy beef, corn, black beans, cheese and tomatoes. Big enough to feed an army, simple enough for a weeknight dinner.

Ingredients

  • 1 pound Ground Beef
  • 1 can Tomatoes With Green Chilies Or Rotel (10 Ounce Can)
  • 1 package Taco Seasoning, 1 Ounce Packet
  • 1 can (15 Oz. Size) Black Beans
  • 1 can (15 Oz. Size) Corn
  • 1 can (15 Oz. Size) Refried Beans
  • 12 whole Corn Tortillas
  • 2 cups Shredded Cheddar Cheese
  • ½ cups Sour Cream
  • Optional For Garnishes: Diced Tomatoes And Avocados; Chopped Cilantro; Salsa

Preparation

Preheat oven to 350 F.

In a large 14-inch skillet over medium heat, cook ground beef until browned. Drain off any grease. Add the tomatoes with green chilies and taco seasoning and stir mixture until seasoning has dissolved. Let mixture simmer until all of the liquid is gone, about ten minutes.

Meanwhile, drain and rinse the black beans and corn. Set aside. Open the re-fried beans and set aside. Grab a 3 quart casserole dish and spray with cooking spray. When the liquid has cooked off of the meat mixture, remove it from the heat.

Start laying your corn tortillas, refried beans, taco meat, black beans, corn, cheese and sour cream into the casserole dish. Just keep repeating layers until your fillings are gone.

Bake for 30 minutes. Remove dish from the oven and let it cool for 5 minutes before serving. Garnish with avocado, tomatoes, and cilantro if desired

I thought this was pretty good, but needed a bit more flavor. I will try it again, but next time I will double the beef mixture. The directions were a bit vague on the layering. I went in the order listed, so the sour cream ended up on top. Next time I will put it on top of the beef. It didn’t affect the taste, but it didn’t look as pretty. I only had enough ingredients to do one layer of each, with the exception of the tortillas, so I just randomly stuck a second layer of those in there.

Definitely a crowd pleasing casserole! I had last minute guests over and needed something to feed everyone, I had everything on hand for this recipe with the exception of using ground turkey instead of beef. Thanks for a delicious, easy, yet different recipe Maebells! I will be making this again!
