Description

Rich and creamy bacon and egg pasta. Just do it.

Ingredients

  • 4 slices Bacon (preferably Applewood Smoked)
  • 3 cloves Garlic, Minced
  • 8 ounces, weight Dry Spaghetti Pasta
  • 4 whole Eggs, Slightly Beaten
  • ⅛ teaspoons Salt
  • ¼ teaspoons Pepper
  • ½ cups Freshly Grated Parmesan Cheese (to Top)

Preparation

Cook the bacon in a cast iron skillet. Remove and drain on paper towels before crumbling.

Add the minced garlic to the bacon grease and cook until fragrant (about thirty seconds). Remove from heat.

Cook the pasta in boiling, salted water. Drain and immediately place back in the pot with the bacon, bacon grease and garlic. Place pot back on the stove over low heat, add the beaten eggs and whisk continuously for three minutes, or until the eggs cook and thicken, creating a silky sauce over the noodles. Be careful not to stop whisking or the eggs will scramble!

Season with salt and pepper and serve immediately garnished with parmesan cheese.

What a great, simple meal! My 18 month old ate nearly as much as I did! Easy and good! Great dish!

This is definitely going to be my go-to “single girl” meal when the boyfriend is out of town. I made it a few days ago and was wowwed without easy and delicious it was. Plus, the whisking was a total workout. Loved it.
