Description

This is the perfect summer meal. The sweet salsa combined with flavorful shrimp can’t be beat!

Ingredients

  • FOR THE TACOS:
  • 18 whole Shrimp, Peeled, Deveined And Tail-off
  • ⅓ cups Flour
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Garlic Powder
  • 1 whole Egg, Lightly Beaten
  • 2 Tablespoons Vegetable Oil
  • 6 whole Corn Tortillas
  • ½ cups Cilantro, Chopped
  • ½ cups Cabbage Chopped
  • FOR THE SALSA:
  • 1 whole Mango, Diced
  • 1 whole Avocado, diced
  • ⅓ cups Onion, Chopped
  • 1 whole Garlic Clove, Minced
  • 1 whole Lime, Juiced
  • ½ teaspoons Salt

Preparation

For the salsa: Combine mango, avocado, onion, garlic, lime juice and salt. It’s best to let this sit for at least 20 minutes for the flavors to build.

For the tacos: Mix together flour, cumin, chili powder and garlic powder in a shallow bowl. Put the egg in another shallow bowl.

Heat oil in a skillet over medium heat.

Dip each shrimp in egg then in the flour mixture. Place shrimp in the pan of hot oil and fry for 1-2 minutes on each side or until they are no longer translucent. When done, set them on a paper towel lined plate to drain.

Build each taco starting with a corn tortilla and topping with three shrimp and the Avocado Mango Salsa. Garnish with cilantro and cabbage.

I made these last night and they were amazing. I made a few changes to the salsa: I added chopped cilantro, half a finely diced jalapeno, a little bit of diced tomatoes. Also, corn tortillas are difficult to find here, so I used flour instead.

YUMMY!! When I saw this receipe I thought boy does this sound good….and it didn’t dissapoint! It was awesome!! My husband and I really enjoyed this dish. The only thing I changed was I double breaded the shrimp to make it extra crispy. I also added a little dressing to it, I mixed a small about of mayo and mixed in lime juice, and cilantro and spread it on the tortilla. Thank you for this delish receipe! Very refreshing for a summer dinner!

The breading on the shrimp was not as crispy as I like, but the flavor was really good. The salsa was great!
