Description

This Shrimp Fried Rice with Broccoli is very flavourful, easy to make and it is gluten-free as well! You can add any veggie, rice and/or soy sauce and you are done.

Ingredients

  • 2 Tablespoons Soy Sauce
  • ½ Tablespoons Sesame Oil
  • 2 Tablespoons Olive Oil
  • 1 cup Large Shrimp, Peeled And Deveined
  • Salt And Black Pepper
  • 2 cloves Garlic, Minced
  • ⅔ cups Red Onion, Diced
  • 1 cup Small Broccoli Florets
  • ⅔ whole Yellow Pepper, Chopped
  • ½ cups Corn
  • ½ cups Frozen Peas
  • 2 cups Cooked Brown Rice
  • ⅓ cups Green Onions, Sliced

Preparation

In a small bowl, combine the soy sauce and sesame oil. Whisk very well and set aside.

In a skillet, heat olive oil over medium high heat. Add shrimp, salt and pepper. Stir occasionally and cook until shrimp are pink on both sides. Then remove them from the skillet and set aside.

In the same skillet, add garlic and onions and cook until onions are gold brown. Add broccoli and cook for about 4-5 minutes. Add the yellow pepper, corn and peas and cook until the veggies are tender, about 2-3 minutes. Don’t forget to stir occasionally.

When the veggies are ready add the rice, green onions and soy sauce mixture. Cook for about 2-3 minutes and add the shrimp! Enjoy your meal!
