Simple and delicious weeknight meal.
Preheat oven to 400ºF. Wrap garlic bulbs in foil and roast for 30-35 minutes. Remove from oven, cool slightly and push out roasted garlic from cloves. Mash with a fork.
Melt butter in a large skillet over medium heat. Add roasted garlic and lemon juice and cook for 3 minutes. Add in shrimp and cook for 3 to 5 minutes until shrimp turn pink and are cooked.
Pour sauce over cooked linguine and toss. Season with salt and pepper and serve.
