Description

A seriously quick and seriously yummy noodle stir fry that will leave your whole family smiling.

Ingredients

  • 1 pound Thin Spaghetti, Or Other Thin Noodle
  • ¼ cups Olive Oil
  • 1  Medium Onion, Sliced Thin
  • 2 cups Cabbage, Sliced Thin
  • 1 bag Frozen Mixed Vegetables (16 Oz Bag)
  • 2 cups Broccoli Florets
  • 1 cup Water
  • ¾ cups Soy Sauce
  • 1 cup Chicken Stock
  • 3 Tablespoons Cornstarch
  • 1 teaspoon Pepper

Preparation

Cook the noodles per package instruction. Try and time this out so that they are ready at the same time that the vegetables finish cooking.

Heat the olive oil in a wok over medium-high heat. Add the onion and cook for 1 minute, stirring once. Add in the cabbage and cook for about 2 minutes, stirring frequently. Add the frozen vegetables and cook for 1 minute, then add the broccoli. Add the water and cover the wok. Steam for 1 minute then drain any remaining water out. Return to heat.

In a small bowl, combine soy sauce, chicken stock, cornstarch and pepper. Pour this mixture into the vegetables and stir until sauce has thickened. Add the the drained cooked noodles and toss until the sauce, vegetables and noodles are all well combined. Remove from heat and serve.
