Description

One Pan Chicken Dinner is a new addition to our family favorites. It’s one of my favorites because it all cooks in the oven.

Ingredients

  • 8 pieces Chicken Drumsticks Or Thighs
  • 1 Tablespoon Olive Oil
  • 3 pieces Carrots, Sliced Lengthwise And Cut In Thirds
  • 1-½ cup Rice (white Or Brown)
  • 4 cups Chicken Stock
  • 1 Tablespoon Dried Thyme
  • 1 piece Large Onion, Sliced
  • 1 teaspoon Seasoned Salt, Divided
  • 1 teaspoon Ground Black Pepper

Preparation

Preheat oven to 400°F.

Spray large casserole dish with cooking spray.

Place chicken in the casserole dish, leaving space between each piece. Pour tablespoon olive oil over chicken pieces. Either rub it into the chicken pieces with your hands, or use a baste brush. Pour rice around chicken pieces. Place carrots throughout the rice. Add dried thyme and 1/2 teaspoon of seasoned salt to chicken stock, and stir together. Slowly pour chicken stock mixture in casserole dish. Place sliced onions on top of one pan chicken dish. Sprinkle the chicken and onions with remaining seasoned salt and black pepper.

Bake for 1 hour. Remove from oven and let sit for 10 minutes.
