Description

Been working on a pizza dough recipe for a long time and I think I have finally settled on this one. I love it. Combined with my Baking Steel (pan), I can make one heck of a pizza in my home kitchen!

Ingredients

  • 2-¼ cups Bread Flour
  • 2-¼ teaspoons Sugar
  • 1-½ teaspoon Kosher Salt
  • 1 teaspoon Instant Yeast
  • 1-½ Tablespoon Extra Virgin Olive Oil
  • ¾ cups Lukewarm Water
  • 3 Tablespoons Lukewarm Water

Preparation

1. Combine flour, sugar, salt and yeast in the bowl of a food processor. Pulse 3 to 4 times until incorporated. Add olive oil and both amounts of water. Run food processor until mixture forms a ball that rides around the bowl above the blade. This will take about 15 seconds. Continue processing 15 seconds longer.

2. Transfer dough ball to a lightly floured surface and knead once or twice by hand until a smooth ball is formed. Place in a covered container or in a zipper-lock freezer bag. Place in the refrigerator and allow to rise at least 1 day, and up to 5. Remove from refrigerator, shape it into a ball, and allow to rest at room temperature for at least 2 hours before baking.

Notes:
1. The longer you let it rise the more sourdough flavor it has.
2. This makes enough dough for a 14″ pizza.
3. You can cook this pizza dough using your favorite method.
