Description

This fish dish is going to satisfy everyone’s palate.

Ingredients

  • 1 Tablespoon Butter, Unsalted
  • ½  Large Onion, Sliced
  • 2 cloves Garlic, Minced
  • ½ cups Dry White Wine
  • ½ cups Kalamata Olives, Pitted And Sliced
  • 1 Tablespoon Capers
  • 1 can (10 Oz. Size) Diced Tomatoes, Drained
  • Sea Salt And Pepper
  • 4 whole Tilapia Fillets
  • ½ whole Lemon

Preparation

In a large skillet, heat the butter over medium heat. Add the onions and saute for 5 minutes. Add garlic and cook for an additional 2 minutes. Onions should be nice and tender.

Add wine, olives, capers, and tomatoes and simmer for 5 minutes.

Dash some salt and pepper on each side of the fillets and add them to the center of the skillet. Cook the fillets for 6-8 minutes or until white and flaky; flip halfway through the cook time.

Season to taste with more salt and pepper. Add squeezed lemon juice over the top of the fish when plating.

I had to leave out the wine and capers as I didn’t have them on hand. I am trying to be healthy and serve more fish and this recipe was better than just the fish alone. I will be making it again.
