A dish that you can consider a new comfort food. The sausage and beans are all baked together in a savory tomato sauce. All in one pan, easy to make and easier to eat.
Place the sausages, garlic, onion and peppers in a large baking pan, drizzle with olive oil and season with salt and pepper. Shuffle the sausages around until well coated.
Bake in the oven for 15 mins at 350 degrees.
In a large bowl combine tomatoes, tomato paste, beans and balsamic vinegar, stir. Pour the bean mixture over the sausages. Return to the oven for an additional 15 minutes.
Garnish with fresh torn basil and Parmesan cheese. Serve with toasted bread.

Made this last night. I loved loved the saucy beans, but I had a hard time getting the sausage done. After the 30 minutes of cook time, they were gray and lifeless looking. I ended up pulling them out, browning them in a skillet, and putting them back in the oven again to re-mingle with the vegetables.

This was an excellent recipe and helped to stretch my four sausages into a large meal. It’s definitely a comfort food for a cold, windy night!

We made this for dinner last night and we were still talking about it this morning! It was excellent and my first recipe from Tasty Kitchen. We made it as written using Italian Turkey Sausage. Thanks for a great recipe. It’s already a favorite.
