Description

Lots of yummy flavors in this chicken marinade make my taste buds dance. It’s moist and perfectly sweet and citrus-y at the same time!

Ingredients

  • 2 cloves Garlic, Minced
  • 2 Tablespoons Balsamic Vinegar
  • ⅓ cups Lime Juice
  • ⅓ cups Lemon Juice
  • 3 Tablespoons Brown Sugar
  • 2 Tablespoons Dijon Mustard
  • ¼ cups Honey
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
  • 4 Tablespoons Olive Oil
  • 2 whole Boneless, Skinless Chicken Breasts Cut In Half
  • 1 Tablespoon Fresh Parsley

Preparation

1. Add all ingredients, except chicken and parsley, into a baking dish.
2. Whisk together.
3. Reserve about 1/4 cup of the marinade for basting.
4. Add chicken breasts into the baking dish and turn to coat the chicken with the marinade. Put dish into the refrigerator and let chicken marinate for 4 hours or overnight.
5. Grill chicken over medium high heat for about 4-6 minutes per side, or until juices run clear.
6. Baste with reserved marinade during the last minutes of grilling.
7. Remove chicken from grill to a platter and let it rest for 5 minutes. Serve with chopped fresh parsley.
