Description

My favorite savory way to eat zucchini! Put the packet on the grill with your meat and they will be done at the same time. Tastes great and there’s no cleanup!

Ingredients

  • 4 whole Zucchini (small Ones)
  • ½ whole Onion
  • 1 dash Seasoned Salt
  • 1 dash Freshly Ground Black Pepper
  • 1 Tablespoon Butter
  • 1 Tablespoon Basil (optional)
  • 1 Tablespoon Parmesan Cheese (Optional)

Preparation

1. Slice zucchini into 1/4 inch thick rounds.
2. Slice onion.
3. Place zucchini and onions on a piece of heavy duty aluminum foil, or a double layer of regular aluminum foil.
4. Sprinkle with seasoned salt and pepper. Top with butter.
5. Fold edges over to create an aluminum foil packet. Leave some air space in the packet. Make sure the edges are sealed well.
6. Place packet on heated grill (I put them on the grill when I put my meat on the grill). Continue cooking zucchini for about 12 minutes. Flip once.
7. Remove from the grill and leave the packet closed for a couple minutes to let it steam. Be careful when opening the packet because steam will escape.
8. Top with torn basil and grated Parmesan cheese if desired.

Note: I like to make this when I’m grilling meat. I leave the zucchini packets on while the meat is cooking and they are done at the same time!
