It’s the perfect combination of sweet, salty and spicy.
Butter one side of both pieces of bread, spreading it in an even layer. The buttered side will be the outer layer. Set bread buttered side down on a clean work surface. Spread each piece of bread with 1 tablespoon of apricot preserves (this will be the inside layer). Now layer one slice of the bread with a slice of cheese, then layer on the peaches, jalapeno, ham, another cheddar slice, and the other piece of bread (with the buttered side facing up).
Now take about a tablespoon of butter and melt it on a griddle over medium heat. Place the sandwich, buttered side down, on the melted butter. Allow to cook for 3-5 minutes on each side or until the cheese has melted and bread is golden brown. Remove from pan, cut in half and enjoy!
