I created this recipe one night when I was craving a chunky tomato sauce. This ended up turning into one of my favorite dishes made during some weight loss journey recipe experiments. Try this recipe for Grilled Garlic Chicken Over Zoodles!
In a large pan, add onion, garlic and olive oil and start cooking over medium heat. Once garlic and onions are browned, add tomatoes, salt and pepper. Once it comes to a boil, lower heat and simmer, covered. Stir occasionally.
Season chicken with salt, pepper and garlic herb seasoning. Start cooking on a grill or grill pan. Cook until internal temperature reaches 162ºF or juices run clear. Let rest for 5 minutes after you remove from heat.
Add basil to the tomato sauce and stir well. Add zoodles (spiralized zucchini) and cook for 1–2 minutes. Serve chicken on a bed of zoodles and enjoy!
