Description

Easy slow cooker Greek chicken tops a pile of quinoa, zucchini and tzatziki. Perfect for a weeknight meal.

Ingredients

  • 3  Chicken Breasts
  • 1  Red Onion, Sliced
  • 1  Green Pepper, Sliced
  • 3 cloves Garlic, Minced
  • 2 teaspoons Dried Oregano
  • ¼ cups Lemon Juice
  • 1 Tablespoon Red Wine Vinegar
  • ½ teaspoons Salt
  • ½ teaspoons Pepper
  • ½ cups Quinoa, Uncooked
  • 1  Zucchini, Cubed
  • FOR THE TZATZIKI SAUCE:
  • ¼ cups Cucumber (grated)
  • 1 Tablespoon Lemon Juice
  • Salt And Pepper, to taste
  • ½ cups Greek Yogurt, Plain

Preparation

Place chicken in slow cooker. Mix together onion, green pepper, garlic, oregano, lemon juice, vinegar, salt and pepper. Pour mixture over chicken and cook on low for 7 hours.

Combine all ingredients for the tzatziki sauce and set aside. The longer the sauce sits, the better the flavor gets!

When you are ready to eat, begin to cook the quinoa according to package directions. Sauté zucchini until tender. Now you are ready to build the bowl!

Begin building by topping some quinoa with sautéed zucchini and the chicken and onions from the slow cooker. Top with tzatziki. Enjoy!
