Description

Thicker than soup but thinner than stew (hence, the name stoup), this alphabet stoup is full of spinach, tomatoes and feta cheese.

Ingredients

  • 16 ounces, weight Alphabet Shaped Pasta
  • 2 cloves Garlic, Minced
  • 1 Tablespoon Extra Virgin Olive Oil
  • 2 whole Lemons, Zested
  • 1 Tablespoon Balsamic Vinegar
  • 1 can (32 Oz) Diced Tomatoes
  • ½ teaspoons Salt
  • ¼ teaspoons Pepper
  • 1 bag (10 Oz) Baby Spinach
  • 8 ounces, weight Feta Cheese, Crumbled

Preparation

Cook the pasta in boiling salted water according to package instructions. Then drain it and set aside.

In the same pot (but off the heat), add the garlic, olive oil, lemon zest, vinegar, tomatoes, salt and pepper. Add the cooked and drained pasta and the spinach and place back over low/medium heat and cook just until the spinach wilts.

Remove stoup from stove and add the feta.

Garnish with an additional drizzle of olive oil if desired.

I used star pasta too, but I wasn’t displeased with the proportions. It was very good, but I think if I make it again I’ll let the garlic cook a bit in a pan before adding it and relying on the warmth of the pot to soften it. I also don’t really enjoy the feta in the dish–I think I’d rather have an Italian hard cheese of some sort. Eatliverun, you’re still one of my favorite sources on this site. Thanks again for a warm dinner idea!

Taste was fine, but the quantities didn’t work for me. I used star pasta (because the store didn’t have alphabet letters), I’m not sure if that affected it or not, but I had to double the amount of tomatoes just to make sure there was some liquid to call it soup and cook the spinach. Otherwise it would have been a pasta dish. Where did I go wrong?
