Cooking pork in the crock makes it taste so good and tender. This recipe for Roasted Red Pepper Pork Chops is so easy to throw in the crock, and at dinner time, you’ll be a happy camper!
1. Lay chops in the bottom of your crock (a 5-quart size crock works great).
2. In a bowl, combine peppers, tomatoes, onion, chili powder, oregano, salt and pepper. Stir well.
3. Pour mixture over chops.
4. Cover and cook on low for 8 hours.
5. Serve mixture over hot, cooked rice.
