Description

Delicious ranch-flavored crockpot pork chops with savory Parmesan mashed potatoes. Easy and very flavorful!

Ingredients

  • 1 package (1 Oz. Size) Dry Ranch Dressing Mix
  • 1 can (10 1/2 Oz. Size) Cream Of Chicken Soup
  • ¾ cups Sour Cream
  • 1-¼ cup Grated Parmesan Cheese, Divided
  • ¼ cups Diced Onion
  • 2 whole Pork Chops
  • 1 cup Baby Carrots
  • 8 whole Red Potatoes
  • 2 Tablespoons Butter
  • 1 Tablespoon Minced Garlic
  • ¼ cups Milk
  • 2 pinches Salt And Pepper

Preparation

In a medium sized bowl mix ranch dressing mix, soup, sour cream, 1/4 cup of the Parmesan cheese and diced onion. Add this into a medium-sized crockpot.

Add pork chops and baby carrots into the crock. Flip the chops and press them down into the liquid to cover them with the soup mixture. Cover and cook on high for 2-3 hours or on low for 4 hours.

About 40 minutes before you’re ready to eat, bring a pot of water to a boil and add the red potatoes. Allow them to boil for about 25 minutes or until fork tender. Drain water and mash the potatoes (do not over-mash). Stir in butter, garlic, remaining 1 cup Parmesan cheese, milk, salt and pepper.

Place pork chops and potatoes on a serving platter. Drizzle with extra sauce that’s remaining in the crockpot. Serve and enjoy!
