Description

Cod fillets, lime juice, fresh tacos.

Ingredients

  • 2 pounds Cod Fillet Or Favorite Fish
  • ½ cups Sour Cream
  • ¼ cups Favorite Salsa
  • Salt And Pepper, to taste
  • Favorite Seasonings (I Use Tony Chachere's)
  • 2 Tablespoons Virgin Olive Oil
  • 2 whole Limes, Juiced
  • 1 whole Small Red Onion, Diced
  • 2 whole Small Tomatoes, Diced
  • Shredded Lettuce
  • Shredded Cheese
  • Chopped Cilantro

Preparation

Preheat oven to 300F. Stack and wrap tortillas in aluminum foil and warm in the oven while preparing the fish.

Whisk together sour cream and salsa in a small bowl; season with salt and pepper. Cover and put in the fridge.

Heat grill or nonstick pan over high heat. Brush fish with oil and season with salt and pepper and your favorite seasonings (I just sprinkled it on both sides of fish). Cook fish until golden brown on both sides, about 4 minutes per side. Remove to a plate; drizzle with the lime juice (I love tons of lime juice on these). Let rest for 5 minutes.

Using a fork, flake the fish into large pieces. Set up a taco bar with all ingredients and go to town! We used flour and corn tortillas. Those who eat fish in this house loved them!

Remember to season, season, season! You can omit sour cream and just use your favorite salsa. Enjoy!

I will difinitely be trying these. We love fish tacos. I’ve made them several times, but this is a healthier version. Can’t wait to try the recipe.
