Description

The ingredients might surprise you with wild rice, water chestnuts, French style green beans and a buttery herb stuffing on top that sends it over the top. In fact, it is better the next day when all the ingredients come together to make a yummy leftover meal.

Ingredients

  • 3 cups Cooked Chicken, Diced
  • 6-½ ounces, weight Box Wild Rice
  • 2 ounces, weight Pimento, Diced
  • 1 cup Mayonnaise
  • 1 cup Sour Cream
  • ½ whole Onion, Minced
  • 8 ounces, weight Water Chestnuts, Chopped
  • 1 can (10 Oz. Size) Cream Of Celery Soup
  • 1 can (10 Oz. Size) Cream Of Chicken Soup
  • 16 ounces, weight Canned French Style Green Beans, Drained
  • ½ cups Cheddar Cheese, Grated
  • 6 ounces, weight Box Herb Stuffing Mix
  • ½ cups Butter, Melted

Preparation

Preheat oven to 350 F. In a large bowl combine first 10 ingredients. Place the mixture in a 9 x 13 dish. Top with cheese. Combine stuffing and butter in a medium-size bowl, mix thoroughly. Sprinkle on top of the chicken mixture. Bake for 35-40 minutes or until golden brown.

This was FANTASTIC!! I used a 6oz box Ben’s Original Long Grain & Wild Rice (I did not use the seasoning packet) and I also used unsalted butter with the stuffing. I baked 3-9oz chicken breasts for this. I did season the casserole with some Bell’s poultry seasoning, black pepper, garlic and onion powder.
This might be my all-time favorite casserole! It would be great for a holiday or company. Also great to take to someone that needs a meal like a new mom. I will definitely make this again!

This was really good! The rice wasn’t quite done so I will try a different kind next time.
