This is one of our best Italian pasta recipes. It’s fast, satisfying, and most of all, delicious!
Add fresh water in a large pot and bring it to boil. Add pasta and stir. (We don’t use salt or oil here because our pasta never sticks together, but you can use either or both if desired.) Cook for about 7–10 minutes, testing occasionally. When done, drain.
In the meantime, in a large saucepan, add olive oil and chopped onion. Cook over medium heat until translucent. Add sliced mushrooms, salt, oregano, and thyme. Stir well and cook for about 3 minutes, covered. Add chicken and asparagus and cook for 5–7 minutes, covered. Add water only if necessary.
Add cooked pasta and pour in tomato sauce. Stir everything and cook for 1 to 2 minutes.
Transfer into a serving dish of your choice, and garnish with Parmesan cheese. Let cool a bit and enjoy!
