Description

A healthy spin on the classic Shrimp and Grits with all the same creamy, cheesy flavor!

Ingredients

  • 2 cups Broth Or Water
  • 1 cup Quinoa
  • ¾ cups Cheddar Cheese, Shredded
  • ¼ cups Milk
  • 1 pound Shrimp, Peeled And Deveined
  • Salt And Pepper, to taste
  • 1 Tablespoon Olive Oil
  • 1 whole Lemon, Juiced
  • 2 Tablespoons Parsley, Chopped
  • 1 cup Green Onion, Thinly Sliced
  • 1 clove Garlic, Minced
  • 2 cups Chard, Roughly Chopped

Preparation

Add water or broth and quinoa to a pot and bring it to a boil. Reduce heat, cover and simmer for about 15 minutes. Remove from heat and stir in the cheese and milk.

Season shrimp with salt and pepper. Add olive oil and shrimp to a pan and cook over medium high heat for 3-4 minutes, until shrimp are just slightly pink. Add lemon juice, parsley, green onions and garlic and sauté for 3 more minutes. Put shrimp mixture onto a separate plate.

Add chopped chard leaves to the same pan and sauté 3-4 minutes, or until wilted.

Serve chard and shrimp mixture on top of the cheesy quinoa. Enjoy!

Great idea! Yes, chicken broth for the quinoa would work great for an extra punch of flavor. I’m so glad you enjoyed it.

I made this Cheesy Shrimp n’ Quinoa this evening. It was very good. However, for chard I had to substitute sautéd spinach. I also served a steamed red pepper as a side dish. All was very tasty. I cooked the Quinoa in water with a chicken bouillon cube for extra flaver. Made for a colorful dish…looked holidayish…will try a yellow pepper next time, since it is spring.

My 7-year-old and I love this recipe! It is so quick and easy to make and is completely delicious. She doesn’t like the Swiss chard so I cut the amount on that and leave it off of her plate. This has become one of our favorite quick dinners!
