Description

A wonderfully easy casserole that doesn’t take much, but fills you up.

Ingredients

  • 1 whole Medium Onion, Diced
  • 2 Tablespoons Olive Oil
  • 1 pound Ground Beef Or Turkey
  • 2 cups Cooked Rice
  • 1 whole Egg
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Dried Oregano
  • 1 Tablespoon Worcestershire Sauce
  • 1 can Diced Tomatoes, 14.5 Oz
  • 1 can Tomato Sauce (8 Oz)
  • 3 cups Chopped Cabbage

Preparation

Saute the onion in olive oil first and then brown lean beef with it.

Add the rice and egg and mix it all together well.

Add seasonings.

Mix diced tomatoes and sauce together.

Grease 3 quart casserole.

Line bottom of casserole with 1/2 cabbage; add 1/2 meat mixture; salt and pepper; add 1/2 tomato mixture; top with rest of cabbage, rest of meat mixture & the rest of the tomato mixture.

Cover, bake at 350 degrees for 1 hour; uncover and bake an additional 30 minutes.

I just made this tonight & it was very good. Next time I might use crushed tomatoes instead of diced but other than, very tasty!!!

This tastes just my grandma’s cabbage rolls, without all the work of cabbage rolls!! BUT, next time I think I will saute up my cabbage with meat mixture and then throw in rice, because my top layer of cabbage in this “casserole” did not wilt, it basically stayed like crisp cabbage, which was a little weird. Second, I’m not real sure what the addition of the egg did for it. And third, maybe I did something wrong because it IS simple, but the directions seemed a bit vague to me.
