Move over kale, Brussels sprouts are taking over the veggie world, starting with this casserole!
Preheat oven to 350ºF.
Spray a 3-quart baking dish (or smaller) with nonstick cooking spray. In a large skillet, melt butter and add bacon. Crisp bacon for about 5 minutes. Then add Brussels sprouts with a little salt and pepper and continue to cook until softened, about 5 minutes.
Add flour, stir, and cook for another minute. Gradually add cream and half-and-half. Reduce heat to medium-low and cook another 5 minutes.
Remove skillet from heat and stir in mozzarella. Pour Brussels sprout mixture into baking dish and sprinkle top with Gorgonzola. Bake for about 25 minutes and, with a few minutes left, turn broiler on to get a nice golden cheesy crust on top.
Serve immediately.
