Description

Simple, quick and packed with delicious smoky barbecue flavors, tender pasta and creamy, melted cheese.

Ingredients

  • 1 Tablespoon Extra Virgin Olive Oil
  • 2 whole Boneless Skinless Chicken Breasts, Cut Into Bite-size Chunks
  • 1 whole Red Onion, Diced
  • 3 cups Water
  • 2-½ cups Chicken Broth
  • 12 ounces, weight Penne Pasta
  • ½ teaspoons Salt
  • ⅔ cups Barbecue Sauce
  • ⅓ cups Sour Cream
  • ½ cups Shredded Mozzarella Cheese
  • ½ cups Shredded Sharp Cheddar Cheese

Preparation

In a large 12-inch nonstick skillet heat the olive oil over medium heat (you could also use a large pot if you don’t have a skillet this big). When hot, add the chicken and onions and saute, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken and onions to a plate and set aside.

In the same skillet, add the water, chicken broth, penne and salt. Bring to a boil and simmer for 12 to 15 minutes, until the liquid is almost absorbed, the pasta is tender and the mixture is thickened. Stir in the barbecue sauce and sour cream. Once mixed, add in the reserved chicken, onions and shredded cheese. Stir to combine and cook until everything is heated through.

Serve immediately and garnish with additional red or green onions and shredded cheese.

My family enjoyed this and I will probably make it again. I will say that the flavor heavily depends on the kind of BBQ sauce that is used. I had some that was slightly sweet on hand, and it was good. Though, next time I think I’ll try it with a more savory sauce. Perhaps I’ll also add some chopped green chiles or jalapenos next time. Thanks for the recipe!

This is a great base recipe I think. I’ll change it up a bit the next time I make it – because it’s super simple, easy, kid friendly and I almost always have the ingredients in the pantry/freezer. I was thinking about adding more cheddar and swapping the sour cream for cream cheese next time to give the sauce more oomph…it was just a wee bit bland for us as is. But I’m glad to have the idea from which to build!

My husband would pry give it 4 or 5 stars, but it just wasn’t WOW for me. But he LOVED it, said he could eat just the pasta in the sauce without the chicken. It is def different, I will say that. It should be on menus in BBQ restaurants. I made no changes, except I halved it and it was more than enough for the two of us, with leftovers for tmrw.
I’ll make it again because he liked it so much, and I’ll add more cheddar next time.
