Easy and delicious! Even my 3 year-old gobbled these up!
Rinse drumsticks and pat them dry with paper towels. Set aside.
In large bowl, stir together the chimichurri seasoning, oil, lemon juice and vinegar. Add the chicken and stir to coat evenly. Cover the bowl with plastic wrap and marinate in the refrigerator for 3-6 hours.
Preheat oven to 400 F. Line a baking sheet with foil and place a rack inside of the pan. Spray the rack with nonstick cooking spray and place chicken on top of the rack. Brush with any remaining marinade that’s left in the bottom of the bowl. Bake at 400 F for 20 minutes, then reduce temperature to 350 F and continue baking until internal temperature reaches 165 F, 10-15 minutes more. Remove from oven and serve with lemon wedges.
