Description

A grown-up grilled cheese–easy to make and packed with flavor!

Ingredients

  • FOR THE PANINI:
  • 1 whole Baguette
  • 4 slices Brie
  • 4 whole Marinated Artichoke Hearts
  • 3 slices Tomato
  • 4 pieces Spinach
  • FOR THE AIOLI:
  • 1 clove Garlic, Minced
  • 1 Tablespoon Mayonnaise
  • 1 teaspoon Olive Oil
  • 1 teaspoon Fresh Lemon Juice

Preparation

Turn on your oven broiler (you can also just use a toaster oven if you have one or a panini press if you’re super fancy like that).

In a small bowl, combine aioli ingredients and set aside.

Cut your baguette in half horizontally (sandwich style). Spread the insides of each slice with a generous amount of aioli then top one side with brie slices and the other with the artichoke hearts and tomato.

Place baguette slices (open faced) in broiler and cook for about 4 minutes, until cheese is melted and bread is toasted.

Remove baguette from broiler, add spinach, and combine the two sides of the baguette to form your panini.

This was so delicious! I made half of this and paired it with some leftover spinach lemon orzo soup (also found on TastyKitchen) and it was so yummy! Pretty much anything with brie and/or artichokes has me salivating and this did not disappoint!
