I can’t lie. I recently had this sandwich at MetroFresh in downtown Atlanta and I had to share it with y’all. It is delicious! It would be great to make as little snack sandwiches too, because you can cut the brie in small pieces and the sandwich doesn’t have to be refrigerated for long.
Cut the personal sized loaf in half horizontally. If you want to make this for multiple people, you could pre-make the whole sandwich using more apricot jam, basil, and brie slices, then cut when finished.
Spread the apricot jam on both sides of the sandwich. Layer brie with slightly overlapping pieces. Sprinkle julienned (long cut) basil on top of brie. Close and eat it up.

Oooooh! I think I’ll be making this into an appetizer with smaller bread. It sounds wonderful!
