Description

Mmm -Mmm If you have never tried Leek and pasta, now is the time ;) especially when it involves goat cheese :D

Ingredients

  • 1 box (small) Angel Hair Pasta
  • 1 package Bacon (or Prosciutto), Cut Into Bite Size
  • 1 whole Leek, Washed And Chopped
  • 1 clove Garlic, Chopped
  • ¼ cups White Wine
  • ¼ cups Chicken Broth
  • 1 cup Reserved Pasta Cooking Water
  • 1 pinch Salt
  • 1 pinch Pepper
  • ¼ cups Goat Cheese

Preparation

Cook the pasta. Before draining, set aside 1 cup of the cooking water.

In a deep pan, brown the bacon (if you feel like spoiling yourself, go with prosciutto) until its just the way you like it. Remove the bacon to stop the cooking process, but leave a bit of the grease in the pan.

Saute the leek and garlic in the bacon grease for about 3 mins on medium heat. Do not over cook; they burn easily!

Add the wine. Add the pasta. Add the chicken broth. Add, as you mix, a little at a time, some cooking water, until the pasta are just the way you like their consistency.

Season to taste with salt and pepper.

Crumble with goat cheese in individual dishes.
