A paleo, vegan and whole30 easy meal packed with plant protein and fiber! Your new go-to lunch!
Place zoodles into a bowl and press with paper towel to remove excess moisture. Drain excess water from bowl.
In a microwave-safe bowl, combine nutritional yeast, almond milk, oil and garlic. Cook in the microwave for 30 to 45 seconds until warm. Remove and whisk mixture until combined. Add salt, pepper and tomato sauce and whisk again.
Toss with zucchini noodles and add sliced tomato, a sprinkle of Italian seasoning, basil, red pepper flakes and capers. Add chickpeas or chicken, if using.
Devour!
