Description

Quick and easy to make, this delicious vegetarian dish is delicious on its own and even better topped with a generous piece of mozzarella.

Ingredients

  • 1 Tablespoon Olive Oil
  • 2 cloves Garlic, Peeled, Slightly Crushed
  • 400 grams Cherry Tomatoes, Cut In Quarters
  • 10 grams Basil
  • ⅛ teaspoons Chili Flakes
  • 1 teaspoon Sugar, Or To Taste
  • 113 grams Pasta, Cooked 1 Minute Less Than Package Instruction
  • 50 grams Spinach
  • 50 grams Walnuts, Chopped
  • Salt And Fresh Ground Black Pepper
  • 100 grams Mozzarella Or Burrata Cheese, To Serve (optional)

Preparation

Heat olive oil over medium heat. Add crushed garlic cloves and cook until fragrant.

Add tomatoes, basil and chili flakes and cook for at least 5 minutes until saucy. Cook longer if you like, just add some water so the sauce doesn’t dry out.

Taste and add sugar if you want it sweeter. Cook for another minute.

Remove garlic. Mix in cooked pasta, followed by spinach. Cook until spinach is wilted and pasta is perfectly al dente.

Mix in chopped walnuts and taste, adding salt and fresh ground black pepper as desired.

Serve in bowls, placing half a piece of mozzarella or burrata cheese on top of each if desired.
