A great summer meal. There is a bit of prep work involved, but the outcome is worth the effort. This makes a large number of servings. Great for a dinner party.
1. In a large sauce pan, boil water for pasta.
2. Blanche snow peas in water until just crisp tender, about 1 minute. Remove peas to a colander. Rinse with cold water to cool; drain well. Chop into 1 inch pieces.
3. Add pasta to boiling water and cook until just tender but firm to bite. Drain. Rinse with cold water to cool; drain well.
4. Transfer pasta to a very large bowl. Add sesame oil and toss to blend.
5. Add to pasta: snow peas, chicken, scallions, cilantro, carrots, and cabbage.
6. For dressing, in a blender combine peanut butter, soy sauce, water, rice vinegar, sesame oil, honey, ginger, garlic, lime juice, and pepper flakes. Blend until smooth.
7. Pour dressing over salad and mix well to combine. Serve at room temperature.

This was delicious! Left the chicken out so it was vegetarian.
