Amazing for a fast supper. My husband said he could eat it every night- and that’s saying something. Everyone loves this- I’ve shown this recipe at work before and people go crazy!! Its so easy.
Halloumi is a mixed milk cheese from Cypress and can be grilled or fried without melting! Its salty and hot and squeaks in your teeth!! One of my favorites.
Rinse salad greens and arrange on plates.
Halve cherry tomatoes. Toss over greens.
Place lemon juice, olive oil, garlic, oregano, s&p in mason jar. Cover tightly, and shake to combine/emulsify. Let stand while you prepare cheese.
Slice Halloumi into bite size pieces- I cut the block in half the long way and then cut into small squares. Not too thin or it will stick to the pan.
Heat a non-stick pan over medium/high heat for a minute or so, then plop in your cheese slices. No need to add oil- trust me.
Let it brown for 1-2 minutes on the first side. You can go for a nice light golden color or brown and crispy. Just watch it so you don’t burn it.
Once you get the color you want, flip slices over and finish on other side- maybe 1 minute.
Take hot slices of cheesy heaven out of the pan, arrange on salad, top with dressing to taste.
You can also make larger batches by mixing salad ahead of time and dressing it, topping with hot cheese just before serving.

Delicious! I was finally able to find halloumi cheese (hard to find where I live) so we had this for dinner. It was great.
