As a professional taste tester, I guarantee this wonderful thing! Roopa is from India, and this is a marvelous family recipe. Simple, but great.
Coarsely shred the carrots in a food processor.
Heat oil in saute pan. Add mustard seeds. When they are just about to “dance”, add serrano slices.
Let the mustard seeds pop and immediately pour the oil and the contents over the carrots.
Add salt, lemon juice and if desired, cilantro. Mix well.
Check to see if more salt or lemon juice should be added.
This is a winner!!
