At first I was a little hesitant to use something other than lettuce as a base for my salad, but I found this to be a wonderfully crisp and delicious summer salad. And a great way to eat zucchini and summer squash fresh.
1. Create lengthwise ribbons out of zucchini and summer squash. I used a vegetable peeler.
2. Sliver the green onions.
3. Mix ingredients together.
4. Drizzle with balsamic vinaigrette.

This is really a good yummy blend of ingredients. Very simple. I omitted the raisins and added a little sea salt and black pepper. It is very good!
