This was a staple growing up on a farm in the summer. Very simple and sooo good!
1. Fry up that bacon! Make sure it is crispy. Now, you could use a few pieces of bacon, but what are you going to do with the rest of the package? That’s right, so just fry it all up and use it. Drain on a paper towel.
2. In a small bowl, whisk the vinegar, sugar, and black pepper.
3. Wash a big bowl of fresh greens from the garden. Spinach, lettuce, mixed, whatever, just don’t use iceberg.
4. Dice up an onion or a green onion.
5. With the lettuce in the big bowl, crumble the bacon over the top, toss the onion in, and then pour the liquid mixture over the top. Give it all a mix and let it sit for a few minutes to soak up the flavors.
6. Enjoy!
