Description

A great salad, approved by 75% of our family of 4. It’s light and not heavy on mayo taste.

Ingredients

  • 1 can (14.5 Oz. Can) Diced Tomatoes, Partially Drained
  • ½ cups Mayonnaise, The Real Thing
  • 1 envelope (about 1 Oz. Packet) Ranch Dressing/dip Mix
  • 2 cups Pasta, Cooked
  • 1 whole Green Pepper, Diced
  • 4 ounces, weight Fresh Mushrooms, Diced
  • 2 cups Finely Shredded Cheddar Cheese

Preparation

Mix tomatoes and mayo together. Add ranch mix. Stir well. Add all other ingredients and mix. Refrigerate for an hour and serve.

Variations: add in cooked chicken for a complete meal. We tried this with some Italian chicken and it worked really well.

And I bet in the winter, add in the chicken, put it all in a casserole dish and bake at 350 until cheese melts and it will be pretty good too.

I tried this for the first time for my fourth of july get together. Everyone LOVED it. The only thing i added was some black olives and it was very tasty. I would definitely make again. (very easy to make as well)
