Description

My mom makes this in the summer with fresh cucumbers from her garden. It keeps forever but there are never any leftovers!

Ingredients

  • 1 Tablespoon Oil
  • 1-½ cup Sugar
  • ¾ cups Apple Cider Vinegar
  • 1 Tablespoon Dried Parsley
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • ½ teaspoons Garlic Salt
  • 8 ounces, weight Pasta, Any Shape, Cooked And Drained
  • 2 whole Medium Cucumbers, Peeled And Sliced Very Thin
  • 1 whole Medium Onion, Sliced Thin

Preparation

Combine all ingredients except pasta, cucumbers and onions. Mix until combined. Pour over pasta, cucumbers and onions. Refrigerate at least 4 hours before serving.

This is an easy summer salad. Everyone loves it and the leftovers keep for a while.

This was really tasty, and kept well in the fridge for a couple of days. I cut down on the sugar (used less than 1 cup) and it was still plenty sweet for me. Will make this again now that cucumbers are ready in the garden!

Made this on Sunday for a family get together. Everyone LOVED IT!! The apple cider vinegar gives it a nice sweetness. I used the equivalent amount of Chef Salt in place of the seasonings & it was great. The dressing does make a lot, so next time I’ll cut down on that amount. I had extra pasta on hand, so I ended up making 1 1/2 recipe and had PLENTY of dressing.
